I have trouble believing that - everything you make looks good! But maybe you are overcooking it. The instructions on my package said to boil for 3 hours but my instant thermometer read way over the minimum temp after just 2 hours. I used the thick cut brisket, which is also the cheapest. I am guessing the thinner cut might get overcooked even faster.
They wouldn't let me have a single crumb of the cookies, but I got lots of corned beef fat! And I don't know why that little girl stuck that hat on my head.

Your corned beef looks yummy. I always turn mine into shoe leather, even when it's cooked with beer!
