Elizabeth’s Simple Quartered Potatoes

Coat the bottom of a glass baking dish with olive and/or canola oil.
Wash and quarter potatoes.
Place potatoes in a single layer in dish.
Spray generously with canola or olive oil.
Sprinkle with salt and pepper.
Bake at 375 degrees for about one hour or until lightly browned and fork tender.
